Euforia Gluten-Free Cakes Review & Giveaway

Happy New Year!  I trust that everyone had a safe new year’s celebration.  I’m looking forward to blogging and interacting with you in the year ahead.

If you’re like me, you’ve probably never heard of href="http://www.euforiaconfections.com/" target="_blank">Euforia all natural thousand layer cake, but it definitely intrigued me.  1,000 layers?  Each individually baked?  That’s impressive.

Euforia makes a regular and a flourless gluten free cake.  I was very skeptical of the gluten free status given that they use regular flour in their other cakes, but they do take precautions and their products are independently tested to less than 5 parts per million gluten.  Here’s what they said about manufacturing:

“The gluten-free cakes are made in the same facility/on the same equipment as gluten-containing products.  However,  the GF cakes are produced on dedicated days when ONLY the GF products are prepared. We do a thorough cleaning/sanitation of all surfaces and equipment on the days in between the gluten baking days and the gluten-free days. Also, the volume of product we make with gluten is very small compared to the quantities of gluten-free product.”

Unfortunately, these cakes do contain butter and milk so I did not taste them, but the rest of my family sampled them.  The cake comes in individually wrapped slices.  It is available in vanilla and spice flavors.

The cake was moist, I could see that.  My family preferred the spice flavor.  Vanilla seemed plain to them.  They thought the cake was good, but not great.  Being a flourless cake, it has an eggy sponge cake taste and texture to it.

I really wish I had been able to taste them because my family is not good at critiquing finer foods.  That’s what these cakes are.  They are probably not something you would buy to have for your child’s after school snack.  They would be perfect for accompanying  coffee or tea while you chat with a friend.

Jovial Pasta Review & Giveaway

There’s a new pasta in my life and it’s name is Jovial brown rice pasta.  I have been perfectly content with the brown rice pasta I have been using for years, but I have to admit that this one is better.

Jovial makes pasta from einkorn, which does contain gluten, and from brown rice.  Be sure if you purchase any of their pasta that it is the gluten-free variety.

Jovial’s href="http://www.jovialfoods.com/products/brown-rice-pasta-gf.html" target="_blank">brown rice pasta is organic and certified gluten-free by the href="http://www.gfco.org/" target="_blank">GFCO.  They have five gluten-free pasta products:  penne, fusilli, caserecce, spaghetti, and capellini.

I wouldn’t say that Jovial pasta is way better than any other gluten-free pasta I’ve tried, but it is noticeably better.  My family noticed it the first time I served it.  They have liked the pasta I’ve been using, but when I served Jovial I received comments like, “This pasta is really good.”

One big difference I noticed is the flavor which is more similar to a regular semolina pasta than other gluten free pastas I have tried.

Another difference is the texture.  It wasn’t mushy and leftovers that were kept in the refrigerator were not as hard and brittle as other pastas.  I’m not sure I would use it in a cold pasta salad, but I might.

I found the pasta to be consistently good among the different shapes. I particularly liked the capellini which is a very thin spaghetti, like angel hair pasta.  I have not found that in other brands of gluten-free pasta.

Columbus Salame Review and Giveaway

I was sent two dry salames that are part of their limited edition cacciatore which is only available in November and December.  One was truffle and the other porcini mushroom flavor.

The bottom line is that I really enjoyed them.  My immediate family was mixed on it and my picky eater wouldn’t even take a small bite.  However, I knew that some of my extended family foodies would like it.

My family gathered Wednesday evening before Thanksgiving and as we sat around the kitchen snacking, I brought out these salames. I was right. The foodies liked them.

The verdict is that the mushroom has a much stronger, distinct mushroom flavor.  But the truffle variety was really good also; it simply had a more subtle flavor.  I , of course, couldn’t pair it with cheese, but others did.  It was perfect holiday snacking food.

Rice Works Review & Giveaway

When I was recently contacted by the company, I looked into the gluten-free status of the crisps.

I had eaten them before, based on the ingredients list, but I always want to find out more before I recommend a product to you.

Riceworks is well informed about celiac disease and understands the importance of people having safe gluten-free food to eat.  Here is their response on their href="http://www.riceworkssnacks.com/faq_USA.html" target="_blank">FAQ page about the gluten-free status of Riceworks:

“We can assure you riceworks is 100% gluten free. We send our samples to an outside lab, which have returned “none detected at a 3ppm level”. We rely on good manufacturing practices in our plant and with our suppliers. Although the plants are not gluten free, the lines that are used to manufacture riceworks® are. There are only a small number of ingredients that include gluten in our plants. These are well marked, stored separately and used on different lines, and even in different rooms in the plants. After running any allergen containing materials, a full cleaning of the line is completed before moving back to non-allergen products.”

All five flavors contain sesame seeds. Only the Parmesan flavor contains milk, and only the sweet chili flavor contains soy.

With that out of the way, lets talk about the snacks.  Officially they are called crisps.  I think that’s a good name for them.  They are a little sturdier than many chips, and might even be able to be used like a cracker, but they are not as thick as a cracker.

They are plenty crunchy and come in a variety of flavors.  Until recently, I had only tried the sea salt flavor which I liked.  The company sent me free product coupons and I was only able to find small bags of sea salt and salsa fresca at a nearby RiteAid store.

My son and I both enjoyed the salsa fresca flavor.  Neither of us are big on spicy hot foods.  These chips had just enough spice for our tastes and reminded us of Doritos chips.  I’m betting that the other flavors are pretty good too. These snack would be a great addition to a holiday party.

T-Tapp Experiment Results In: How did the claims stack up? [Giveaway!]

The Gym Buddies and I having a little fun with our first T-Tapp workout. Note: this is NOT supposed to be a demonstration of good form or whatever. It’s just us being silly. Between the butt-slapping, oil-welling and hoe-downing, you would think that these past few weeks of T-Tapp were all fun and games (and, not gonna lie, it had some really funny moments) but I also learned a lot. My Experiment ran from October 17 to November 13 and I did some form of T-Tapp every day. Usually it was the 45-minute “total workout” but sometimes it was the basic 15-minute version. Gym Buddies Megan, Allison, Krista, Beth, Jenn, Jeni, and Jess joined me for the last two weeks. In addition to reading her book (twice) and watching all the DVDs, I also tried all the sample workouts on Teresa Tapp’s site including the ab workout, the diva derriere and some others. I say this not to brag but to say that I did my best to really do this program the way it was intended to be done. This is important because as you may recall, Teresa makes some interesting claims and big promises in regards to the power of T-Tapp. So how did it all work out?

The short answer: It was both better and different than I had expected but it was not the magic mummy-tummy bullet I’d hoped it would be.

The long answer:

Claim: T-Tapp “pumps the lymphatic system” to eliminate toxins from the body

Verdict: Mostly true. There was some debate in the comments section of my first post about whether T-Tapp can really “pump the lymphatic system” to eliminate toxins from the body as Teresa explains in her book. I originally wrote that this struck me as pseudo-science but upon further investigation it seems there is truth to this. The first thing I learned is that it’s actually called the lymphoid system - huge apologies to my college anatomy professor! – and it’s an integral part of our immune system. The purpose of the lymphoid system is to gather the toxins from various parts of the body via your lymph nodes and transport them to the kidneys or liver where they are then filtered out of the body. Because the lymphoid system has no direct pump to move the lymphatic fluid, it uses gravity and the contraction of skeletal muscles to do its work. So the more you use your skeletal muscles – like, say, while exercising – the more you’re helping your lymphoid system clean your body. Yay, another great reason to exercise!

Whether or not the T-Tapp exercises are better than other exercises at doing this I can’t say, however. One study that I read seemed to think that rebounding (exercising on those mini-trampolines that look so pants-wettingly fun) is the best exercise for your lymphoid system because it involves the use of gravity more than less bouncy exercises.

Also, I’m not sure this is related but Megan had an interesting (TMI) discovery: “I will say that my poops have been awesome these past couple of weeks!” She then went on to describe them in greater detail but I decided to spare you guys. So you’ll just have to trust me when I say that Dr. Oz could make Megan his Poop Poster Girl.

Claim: T-Tapp can help you “lose up to 2 dress sizes in 4 weeks” and you will lose inches in 2 weeks

Verdict: It didn’t work that way for us. I did it for a full month and didn’t lose any inches anywhere except for 1/2 an inch off my boobs and frankly I want that back. I also may have gained 1/4 inch on my waist but I should note that girly hormones were wreaking havoc with me this past week and I’m lucky the bloat was only 1/4 of an inch. A wide variety of Gym Buddies of varying body types and fitness levels tried the 2-week “bootcamp” and none of them lost inches or dress sizes either. Megan says, “I didn’t lose any inches (maybe a 1/2 inch from my pecs & bust, but it could just be that I was wearing a different sports bra.)” and Allison adds, “I went up 1.5″ – Belly and up 1″ – Chest. Everything else stayed the same. Overall I am up 2.5″, not cool!!!!” Everyone else stayed the same.

However, I don’t want to say that it won’t work for you. First, it was a good workout (more on that in a minute) and I think if you have no fitness base then doing this program could get you pretty radical results. Second, we may not have been doing it properly. This felt like a program where form is everything and while I did watch all the instructional videos I’m sure I would have done better with in-person training.

Claim: T-Tapp will give you that below-the-bellybutton flat tummy that so many women have trouble with.

Verdict: Not true for us. All of us that tried it have had two or more babies and have the war wounds to prove it. And our pooches are still there in all their stretched-out glory. Sigh. I really really wanted this one to be true.

Claim: Everyone can T-Tapp

Verdict: Absolutely true! I don’t know that I’ve ever come across a workout before that is tough enough to challenge me and yet has zero impact. Not only that but it requires no equipment. Pregnant, disabled, injured, elderly, obese, frail – pretty much anyone could do this workout. It’s that gentle. I think this was my favorite thing about this workout.

Claim: And yet it’s tough enough to challenge anyone

Verdict: Mostly true. I was surprised; it wasn’t wussy. Just try this: Stand with your feet hip-width apart. Bend your knees until you can’t see your toes. Tuck your butt (like you’re doing a pelvic thrust, yes). Roll your shoulders back and down with your thumbs pointing out. And then rotate your quads slightly until your “knees are over little toes.” This is the basic T-Tapp stance and I guarantee that if you stand like that long enough it starts to get burn-y. (Seriously, stand up right now and try it. Yeah you might have to explain to your boss why it looks like you are humping the copy machine. It’s worth it.)

In an effort to make it a little harder and speed it up a bit I took out all the breaks between exercises which meant we basically held this position for 30-40 minutes. Ouch. Says Allison, “I thought the workout was tough. I had to take some much needed breaks in order to be able to stand otherwise I would have collapsed to the floor. It was a nice change up from our weights and it was fun to do, i’d definitely do it again sometime.” Let me remind you that Allison back squats over 200 pounds. Girl does not have weak legs. I personally really liked the lunge sequence as it had you work your muscles through their entire range of motion and not just in a contracted position. (Does this mean that if you aren’t super tough it will be too hard? No. Like I said, I took out all the breaks between exercises. If you do it exactly as the video instructs I think anyone of any fitness level would be able to do it.)

Weirdly, even though some of the workouts – like the diva derriere – hurt like crazy, we were never sore the next day. I don’t know what this means.

Claim: T-Tapp can cure cellulite

Verdict: I don’t know. My cellulite is still there and as you may remember I really don’t care. For some reason cellulite has never bothered me. Plus I didn’t do the body brushing technique Teresa recommends so I don’t think I’m qualified to speak on this point.

Claim: T-Tapp will help your posture

Verdict: Total success! Saturday night I was at a church meeting when my friend leaned over and said, “Wow, you sit up so straight! How do you do that? You have like perfect posture!” And you know what? I DID! I hadn’t even realized it nor had I been specifically trying to sit up straight but I think all that time rolling my shoulders back and down and tucking my butt paid off! Beth noticed this effect too. While she didn’t lose any inches off her tummy she did say, “I felt like it made me look and feel leaner.” And this folks is why you want to stand up straight:

Confession: Even with all of my experience trying out different workouts and knowing everything that I do, I still in my heart of hearts hope that I will someday find the “magic bullet” that will give me perfect health, happiness and thighs. And I’m always a little disappointed when programs don’t live up to all their hype.

I was super excited after reading all the testimonials both in her book and from comments on my first post to try T-Tapp. But this wasn’t a miracle workout. At least not for me. It had things about it I really liked and I can see us working it in from time to time but this wouldn’t be my go-to workout. There isn’t enough variety for me. That said, however, I really do like the posture help and I can see myself doing the “Primary Back Stretch” move and the 15-minute workout a couple of times a week. Megan agreed saying, “ I did like that I felt a good stretch from it.  My back and hamstrings get pretty tight, and doing the Primary Back Stretch in the morning seemed to help get the kinks out.”

So that’s my really long write-up on T-Tapp! (Two loooong posts in two days – I’m sorry! I swear I’ll keep it short tomorrow!)

Do you have a secret to good posture? Any of you still secretly hope you will someday find the magic fitness bullet too, even when you know better??

Kettle Cuisine Review & Giveaway

href="http://www.kettlecuisine.com/" target="_blank">Kettle Cuisine is a company that sells gluten-free soups.  I have heard of them for years but had never tried any of the gluten-free soups until recently.  I can whole heartedly say that they win my approval.

Unlike most soups, these are not sold in a can.  They are frozen.  They come in 10 ounce single serving bowls which can be cooked in the microwave.

I was very pleased with these soups.  They tasted great and I would not have guessed they were a frozen soup if someone had handed it to me already heated.  The soups are hearty and contain plenty of chunky, whole food ingredients.

Speaking of ingredients, here is what’s in the chicken noodle soup:

“Chicken Stock, Chicken Meat, Rice Noodles (brown rice, rice bran, water), Carrots, Celery, Onions, Chicken Fat, Sea Salt, Spices.”

That’s the kind of soup I make for my family, and the kind I like to buy.

Kettle Cuisine is not a strictly gluten-free company, but they have a wide selection of gluten-free soups including vegetarian, dairy free, and low fat varieties.  I was pleased to find that 6 of their 10 gluten-free soups are also dairy  free.

Regarding the gluten-free status of their soups, Kettle Cuisine states on their site:

“We carefully segregate cooking of all gluten free soups and only begin cooking soups containing gluten once gluten free cooking is complete. In addition, we test every batch for less than 5 parts of gluten per million, which is well below the FDA’s proposal for 20 parts per million. As a result of these practices, we are proud to be officially certified as a gluten free manufacturer by the Gluten Free Certification Organization (GFCO).”

Where to Buy:

Kettle Cuisine soups are sold at a wide variety of retailers.  In my area, they are sold at a number of health food stores as well as Giant, Wegmans and Whole Foods.  You can find a store near you using their href="http://www.kettlecuisine.com/Where-To-Buy.aspx" target="_blank">Where to Buy page on their site.

Pamela’s Whenever Bars Review & Giveaway

If you are not familiar with href="http://www.pamelasproducts.com" target="_blank">Pamela’s Products, I’m happy to introduce you to them.  Pamela’s is a completely gluten free company.  They make great tasting cookies and dessert mixes, among other things, and their products are certified gluten free by href="GFCO" target="_blank">GFCO.

Some of their products do contain dairy, soy, eggs or nuts.  Their href="http://www.pamelasproducts.com/allergy.aspx" target="_blank">allergy information page makes it easy to find out which allergens are in which products.

Pamela’s recently introduced Whenever Bars and I have had a chance to sample all four flavors:  Oat Blueberry Lemon, Oat Chocolate Chip Coconut, Oat Raisin Walnut Spice, and Oat Cranberry Almond.  All of the bars are gluten, dairy, corn, and potato free.  All but the Oat Chocolate Chip Coconut are soy free, and the soy in those is non-GMO.

There were three things I loved about these bars:

  1. The wholesome ingredients
  2. The distinct flavors
  3. How filling the bars were

I have to say that I was very impressed with these bars.  They use wholesome ingredients like cranberries and blueberries (depending on the flavor of the bar), organic eggs, chia seeds, coconut sugar, and more.

I also love the flavors in each one.  The Oat Blueberry Lemon was a favorite for both me and my son.  The distinct lemon and blueberry flavors made the bar a delight to eat.  But all of them are good and each has wonderful flavor to it.

I also found the bars to be quite filling.  With 2 grams of fiber and 2 grams of protein in each bar, they are a perfect on the go snack to hold you over until the next meal.  My son likes grabbing one on his way out the door as a quick and easy breakfast.

The Whenever Bars look like a cross between a granola bar and a cookie.  They do look a bit odd, but as soon as we tasted them we didn’t care how they looked!  Here is one next to the package on a small plate.

Pamela’s also sells a very popular pancake and baking mix.  I did receive a package of the mix and one will be included in the giveaway prize.  However, after I received it I realized it contains milk, so I did not try it.  I have heard that many people like the mix both for pancakes and general baking.

Fundraiser for Heather George (local peeps) & YMX Giveaway Winner

As I’m currently in the pre-church Sunday morning insanity (according to my boys ties are just nooses with nice fabric) this will be quick:

Running Naked and My First-Ever Censored Post! (Giveaway!)

Fall is perfect outdoor weather and my favorite season to run in. There’s nothing like the crisp air, the colorful leaves and the sunshine to really make you move! But just like every other season it can take some wardrobe adjustments as you move from as-little-as-decency-allows to layer city. Do you like really unique and funky patterns? Do you like quality? But most importantly, do you like to have well-ventilated nethers? Then you have to try these YMX by Yellowman pants:

I’ll admit I’ve always loved Yellowman for their designs. I used to drool over them in the Athleta catalog and imagine how serene I’d look slamming someone’s (imaginary) head into my knee whilst decorated in such zen artwork. And since it’s against my religion to get tattoos (I’m LDS a.k.a. Mormon) this was about as close as I’m ever going to get to living out my dream of looking like this blogger.

 Heck yeah I’m posting this pic again! Do you know how hard it is to show muscle definition on a pale girl?? This may be the only time my biceps ever come out of hiding and I’m gonna run with it. Oh wait, we’re talking about the clothes. Look at the beautiful lady on my boobs! 

But it wasn’t until I ran in them* that I realized their true power: they are made out of the thinnest fabric imaginable. It’s kind of like running naked. In a good way. Sweat is so quickly wicked away that you never have to worry about sweat marks in embarrassing places. They were so light and airy that I had to keep looking down to make sure they were still situated properly. About halfway through my run it occurred to me that maybe they are supposed to be underwear. I mean a lot of workout clothing falls into that ambiguous spot between undies and overs, right? I blushed and imagined little censor bars over my naughty bits (for the record: you couldn’t see anything naughty, it just felt that way).

When I got home I emailed their rep to ask if they were meant to be a base layer or if people wore them as is and got the comforting response that either way was a-ok and that their special technical fabric was known for it’s lightness. Phew. I didn’t scandalize the neighbors then. This time. (Want to win your own naked outfit? See below!)

In other censored news, one of my posts for Redbook this week on “Kid-isms – words kids hilariously mispronounce” ended up posted quite a bit shorter than I wrote it. I understood my editor’s reasoning but they axed the funniest parts so I had to put it up here in all it’s unedited glory:

My Top 10 Favorite Kid-isms (Uncensored version!)

One Christmas season as we were getting my tired 2-year-old son’s picture taken with Santa, I decided to don a Santa hat and make funny faces to help get him to smile. It worked, but not the way I had intended. My son, whose word for “Santa” was “ho” (shortened from “ho ho ho”), exclaimed loudly and clearly, “Hey my mommy’s a ho!” Believe me, there were a lot of smiles (and questioning looks) after that! One of the best parts of having kids is getting to hear the words they adorably mispronounce — “basgetti” for spaghetti, “alligator” for elevator, and all the variations on octopus — but sometimes these mispronounciations are hilariously disastrous. Read on for my favorites:

- “For our daughter, lotion sounded like “oh sh*t.” It was so funny, I’ve got a video of it posted on facebook.” ~Ted

- “My brother couldn’t pronounce my name when he was little and called me “wah wah” – I’m not sure it was as much a mispronunciation as it was admitting defeat, though, to be honest.” ~Forest

The total lack of comments on this post makes me think that a) this is ridiculous and b) no one wants to admit to thinking it’s ridiculous because then we’re that mom.

Costume Panic! To make or buy, that is the mommy-guilt question. 

Dentist Buys Kids’ Halloween Candy From Them. Brilliant solution to the candy dilemma? Or not as easy as it sounds?

Pacific Foods Broth Review & Giveaway

I like to make my own chicken broth, but there are times when I don’t have any, or it’s not thawed.  In those cases I almost always turn to href="http://www.pacificfoods.com/our-foods/broths" target="_blank">Pacific Natural Foods broths.

That’s why I was thrilled when they contacted me to do a review this fall.  As the weather turns cooler and the holidays approach, broths are perfect for making href="http://glutenfreehomemaker.com/soup-vegetable-side-dish-recipes/">soups, stews, and gravies as well as adding flavor to rice, stuffing, and potato dishes.

I really like all of the Pacific Natural Foods broths.  They have great flavor and use natural ingredients.  All of their broths are gluten free.  You can use their href="http://www.pacificfoods.com/files/file/Product_Guide_06_2009.pdf" target="_blank">product guide to find out what allergens are in any of their products.  You will also find a list of their gluten-free products on the href="http://www.pacificfoods.com/our-foods/special-diets#Gluten_Free" target="_blank">special diets page.

The organic free range chicken broth is probably the product I use the most.  The quart size container is usually perfect for making soups.  If I need less than a quart for a recipe, I put the remainder in the refrigerator and use it for another meal.

The ingredients in the chicken broth are: Organic chicken broth (filtered water, organic chicken), Organic chicken flavor (organic chicken flavor, sea salt), Natural chicken flavor (chicken stock, salt), Sea salt, Organic evaporated cane juice, Organic onion powder, Turmeric, Organic flavor

One cup does contain 570 mg of sodium, but if you are watching your sodium intake you can opt for the low sodium version which has only 70 mg of sodium.

I have found that pouring from the cartons is a bit tricky.  If you try to pour too fast it comes out in bursts and results in splashes.  The key is to pour slowly. Don’t tilt the carton much and you will have a nice slow but steady stream without any splashing.

Pacific Natural Foods also makes delicious soups and dairy free beverages.  Their hazelnut chocolate is a favorite of mine.  If you can eat dairy, they sell href="http://www.pacificfoods.com/our-foods/condensed-soups" target="_blank">gluten-free condensed soups.  I have never tried these, but I certainly would if I was eating dairy products.
