Gluten-Free Menu 4-22-12

I have mentioned before that one of the reasons why I don’t menu plan is because I plan too many big meals and end up with too much food.  That’s what happened this week.

Part of the problem was that I shopped at BJ’s and forgot that a pack of cube steaks is enough for two dinners not one.  The other problem is that even although I didn’t have a menu written down before I went shopping, I do a bit of planning in my head as I’m shopping.  And in this case I over planned.

That’s the reason we had leftovers, but there was still too much food and some was frozen for another time.

Rotisserie Chicken – Thankfully BJ’s has a couple of options which are labeled gluten free.  Shop around a the stores in your area and it’s likely you will find one that has a chicken you can eat.  Rotisserie chicken is one of my fast food meals.

Cube Steak – I don’t cook it often, but my husband particularly likes it.

Baked Salmon – My kids absolutely love salmon cooked this way.

Gluten-Free Menu 4-15-12

Menu Plan 4-15-12

Since I am sharing last week’s menu with you in hopes that it will help you plan your meals for this week, my menu starts with our Easter dinner.  I also shared with you last week all that was on our Easter menu, and you’ll be seeing what we had for dessert tomorrow.  The rest of the week looked like this:

Spanish Rice and Sausage

Spaghetti – I didn’t make meatballs this time but used ground beef in the pasta sauce.

Crock Pot Chicken and Vegetables along with quinoa and broccoli.  I cooked the quinoa in chicken broth and added the onions, celery, and carrots that cooked with the chicken to the quinoa after it was cooked.  My family liked it that way.

Salisbury Steak with oven fries.

Tacos – It was a busy Friday evening for most of us and I needed something easy.  I actually cooked the ground beef and added the taco seasoning the evening before when I was preparing the Salisbury steak.

I didn’t do much baking last week, but we had a lot of appetizer foods.  I made a dairy free spinach dip, bacon wrapped dates, and a few date balls.  One of my boys made guacamole.

Hi everyone!  I hope you had a great weekend.  I did, although it was full of young men hanging out here for hours on Saturday and then several came again for Easter Dinner on Sunday.  By Sunday night I was ready for a Jane Austen movie!

What is the Best Gluten-Free Bread Machine?

If you are interested in buying a bread machine to use for making gluten-free bread, here are a few things to consider.

1.  Gluten-free dough needs a lot of mixing.  Bread machines are designed for mixing and kneading gluten-containing dough which is much thicker and way more elastic than gluten-free dough.

Most bread machines have one paddle that is used for mixing.  My Breadman machine has one paddle and often I mix the bread ingredients in my KitchenAid mixer and then add the dough to the bread machine for rising and baking.

Some machines have two paddles and do a better job of mixing. I’m pretty sure Zojirushi bread machines all have two paddles. I don’t know if other brands do too. Expect to pay more for a two-paddle machine, but it might be worth it if you don’t have to use your mixer first.

2.  Gluten-free dough only needs one rise. Gluten-containing doughs rise, are punched down, and rise again, maybe even three times.  That’s not necessary for gluten-free breads.  A machine with a gluten-free cycle will likely eliminate the unnecessary rises.

3.  A gluten-free setting doesn’t mean it will make great gluten-free bread.  It takes a lot more than that to get a good loaf of gluten-free bread.  A good recipe or mix is much more important.

4.  A custom cycle is better than a gluten-free cycle.  My Breadman machine has both a gluten-free cycle and the ability to create custom cycles.  A custom cycle means that you can program a cycle to specified times for each part of the process.

Recipes and mixes vary greatly and you will often find that instructions given for mixing time, rise time, and bake time vary from one recipe/mix to another and may never match the gluten-free cycle times.

A programmable machine is worth much more than a machine with a gluten-free setting.

5.  It takes less time to make a loaf of gluten-free bread than a loaf of wheat bread.  As mentioned in number 2, gluten-free bread does not need multiple rises and therefore the total amount of time is shorter.

Considering that, you might find that baking the bread in your oven is almost as easy, especially if you have a one-paddle machine and have to do the mixing by hand anyway.

What is the best gluten-free bread machine?  Probably one with two paddles and at least one (more is better) custom cycle.   But really, you might be the best bread machine.

Gluten-Free Easter Menu & Last Week’s Menu

Here’s what we’ll be having for Easter dinner today:

Easter Menu Plan

I haven’t cooked ham in the slow cooker before, but that will work best for me so it can cook while we’re at church.  The roasted red potatoes and green beans almandine are pretty easy to prepare.  The trifle I have made once before and it was delicious.  I will be sharing that recipe with you next week.

Here is what we had last week:

Olive Garden – I have eaten from their gluten-free menu twice and and twice I have ended up not feeling good afterwards.  I didn’t have clear gluten reactions, but I also took enzymes with the meal which really helps with symptoms.  I probably won’t be eating there again.

Easy Chicken Divan – I had cooked chicken that needed to be used. I made this dairy free by using almond milk in the cream soup and omitting the cheese.

California Pilaf – I cooked it in the slow cooker this time and the rice turned out a little mushy, but it was still good.  It cooked pretty quickly.

Favorite Chicken Breasts and Asparagus Soup – The soup is something I’ll be sharing at Lifetime Moms next week.

Hamburger Spinach Quiche – This is a crustless quiche recipe, but I made it with a crust using my multi-purpose pastry dough.  Both recipes make enough for two quiches.  I omitted the cheese and used almond milk.  I was a little short on ground beef so I added an extra egg.  It was delicious!  My 15 year old was amazed that something so good was gluten and dairy free.  My oldest son thought I should sell it.

Pizza – I used a pizza crust mix that I will be reviewing and sharing with you in the future.

I don’t menu plan most weeks, but I like to share with you what we had last week.  I think menu planning can be very helpful, especially if you’re still figuring out the gluten-free diet.  Here are a few ideas for your menu this week.

I simply can’t remember what we ate last Sunday, and since I didn’t post it on Facebook I can’t go back and look.  Here is the rest of the week.

Slow cooker beef and green beans served over rice.  This is an old favorite recipe that I’ll be sharing with you some time.

Roast chicken and French fries.  I forgot to pick up potatoes at the store, so I opted for frozen French fries with this meal.  I did remember to brine the chicken before I roasted it.  It turned out nice and moist.

I roasted two chickens and used the second one in chicken tetrazzini with broccoli.  This is a great meal that my family enjoys, though it’s not as good without Parmesan.  To make it dairy free I used coconut oil instead of butter and omitted the Parmesan cheese.  I did serve cheese on the side so dairy eaters could add some to theirs.

I made my single crust pizza this week but doubled the recipe.  I used water rather than almond milk which makes it a bit crunchy.   My gluten-free son is trying a dairy free diet.  He wasn’t too impressed with Daiya cheese substitute.  Real cheese is still too fresh in his mind.

Both the beef and green bean and the chicken tetrazzini recipes made a lot of food.  We ended up eating leftovers two nights.

I spent a lot of time last week working on a couple of Easter treats.  I’ll be sharing one here tomorrow and the other at Lifetime Moms later in the week.

I also baked muffins using a new mix that I’ll be reviewing along with a giveaway on Tuesday.

Here are some meal ideas for you from what we had last week. You can always stop by my Facebook page in the evenings to see what we’re eating for dinner.

chicken cacciatoreChicken Cacciatore – I brine the chicken breasts before putting them in the slow cooker.  The chicken turns out so nice an moist.

chicken scampi with vegetablesChicken Scampi – I added zucchini to the onion and pepper in the recipe to make it a complete meal.

baked salmonBaked Salmon – This week I added Old Bay seasoning to the salmon instead of basil and parsley.  It was a delicious meal with brown rice and asparagus.

Meatloaf – I used this recipe but baked it in the oven and made mashed potatoes on the stove.

meatballs and spaghettiSpaghetti and Meatballs – I made extra meatloaf the night before and used some of it to make meatballs.  The next night the meatballs just needed to be reheated.

I baked muffins which I’ll be sharing with you tomorrow.  I also made a batch of peanut butter cups which one of my kids has been asking for.  They’re so good!
