Italian Sausage and Pasta

This stovetop meal is relatively quick and easy to prepare, and it has plenty of flavor.  My family enjoyed it, especially since broccoli is our favorite vegetable.

This would typically be a summer time meal for us, but this winter has been much warmer than usual.  I’ve prepared fewer soups, stews, and casseroles than I normally would.

Maybe it’s warm where you are, maybe not.  It’s good food whenever you eat it.

Ingredients
  • 12 ounces gluten free pasta
  • 3 Tablespoons olive oil
  • 1 teaspoon dried basil
  • 1 Tablespoon dried parsley
  • salt to taste
  • 6 Sweet Italian Sausages (pork or turkey)
  • 1 Tablespoon coconut oil (or vegetable oil)
  • 1 pound fresh broccoli
Instructions
  1. Cook and drain the pasta.
  2. Add the coconut or vegetable oil to a large skillet and cook the Italian sausages.
  3. Wash, cut and steam the broccoli.
  4. Add the olive oil, basil, parsley, and salt to the cooked pasta and toss to coat.
  5. Cut the sausages into slices and add them along with the broccoli to the pasta and toss to combine.

Jovial Pasta Review & Giveaway

There’s a new pasta in my life and it’s name is Jovial brown rice pasta.  I have been perfectly content with the brown rice pasta I have been using for years, but I have to admit that this one is better.

Jovial makes pasta from einkorn, which does contain gluten, and from brown rice.  Be sure if you purchase any of their pasta that it is the gluten-free variety.

Jovial’s href="http://www.jovialfoods.com/products/brown-rice-pasta-gf.html" target="_blank">brown rice pasta is organic and certified gluten-free by the href="http://www.gfco.org/" target="_blank">GFCO.  They have five gluten-free pasta products:  penne, fusilli, caserecce, spaghetti, and capellini.

I wouldn’t say that Jovial pasta is way better than any other gluten-free pasta I’ve tried, but it is noticeably better.  My family noticed it the first time I served it.  They have liked the pasta I’ve been using, but when I served Jovial I received comments like, “This pasta is really good.”

One big difference I noticed is the flavor which is more similar to a regular semolina pasta than other gluten free pastas I have tried.

Another difference is the texture.  It wasn’t mushy and leftovers that were kept in the refrigerator were not as hard and brittle as other pastas.  I’m not sure I would use it in a cold pasta salad, but I might.

I found the pasta to be consistently good among the different shapes. I particularly liked the capellini which is a very thin spaghetti, like angel hair pasta.  I have not found that in other brands of gluten-free pasta.

Whole Wheat Pasta with Smoked Clams and Fiddleheads

Yield 4 servings 
Ingredients
1 cup fiddleheads, ends trimmed
1/2 (16 ounce) package whole-wheat spaghetti
2 tablespoons olive oil
2 large cloves garlic, minced
2 (3.75 ounce) cans smoked clams, drained and chopped
2 tablespoons dry white wine
1/2 teaspoon salt
1/4 cup grated Parmesan cheese, or to taste
Directions
Place the fiddleheads into a saucepan and cover with water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 15 minutes. The water will turn brown. Drain, and set aside.
While the fiddleheads are boiling, fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the spaghetti, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 12 minutes. Drain well in a colander set in the sink.
Heat the olive oil in a large skillet over medium heat. Cook and stir the garlic until fragrant, then stir in the smoked clams. Stir in the drained fiddleheads, white wine, and salt. Cook until heated through, about 5 minutes. Toss with spaghetti, and serve with Parmesan cheese.

Turkey Bake with Whole Wheat Pasta

Ingredients
1 (16 ounce) container low-fat ricotta cheese
1 (8 ounce) package shredded low-fat mozzarella cheese
2 cloves garlic, minced, or more to taste
salt and ground black pepper to taste
1 (1 pound) package whole-wheat penne pasta
1 pound ground turkey
1 (13.5 ounce) jar spaghetti sauce
Directions
Preheat an oven to 300 degrees F (150 degrees C).
Stir the ricotta cheese, mozzarella cheese, garlic, salt, and pepper in a bowl; set aside on counter to allow to come to room temperature.
Bring a pot of water to a boil; cook the penne in the boiling water until cooked through yet firm to the bite, about 11 minutes. Drain and transfer to a large mixing bowl.
While the pasta cooks, place a skillet over medium heat. Crumble the turkey into the skillet; cook and stir until the turkey is completely browned. Drain and add to the pasta.
Spread 2 tablespoons of the spaghetti sauce into the bottom of a 13×9-inch baking dish; stir the rest of the spaghetti sauce into the pasta and turkey mixture. Spoon about half of the pasta mixture into the baking dish; top with the cheese mixture and spread into an even layer. Spread the remaining pasta mixture over the cheese layer. Cover with aluminum foil if desired.
Bake in the preheated oven until slightly brown on top, about 30 minutes.

Fresh Semolina and Egg Pasta

Ingredients
2 cups all-purpose flour
2 cups semolina flour
1 pinch salt
6 large eggs
2 tablespoons olive oil
Directions
Thoroughly sift together all-purpose flour, semolina flour, and pinch of salt. On a clean surface, make a mountain out of flour mixture then make a deep well in center. Break the eggs into the well and add olive oil. Whisk eggs very gently with a fork, gradually incorporating flour from the sides of the well. When mixture becomes too thick to mix with a fork, begin kneading with your hands.
Knead dough for 8 to 12 minutes, until it is smooth and supple. Dust dough and work surface with semolina as needed to keep dough from becoming sticky. Wrap dough tightly in plastic and allow it to rest at room temperature for 30 minutes.
Roll out dough with a pasta machine or a rolling pin to desired thickness. Cut into your favorite style of noodle or stuff with your favorite filling to make ravioli. Bring water to a boil in a large pot, then add 4 teaspoons salt. Cook pasta until tender but not mushy, 1 to 8 minutes depending on thickness. Drain immediately and toss with your favorite sauce.

Whole Wheat Pasta

Ingredients
1 1/2 cups all-purpose flour
1 1/2 cups whole wheat flour
1/2 teaspoon sea salt
4 eggs
2 teaspoons olive oil
Directions
Stir together the all-purpose flour, whole wheat flour and salt in a medium bowl, or on a clean board. Make a hollow in the center, and pour in the olive oil. Break eggs into it one at a time, while mixing quickly with a fork until the dough is wet enough to come together. Knead on a lightly floured surface until the dough is stiff and elastic. Cover, and let stand for 30 minutes to relax.
Roll out dough by hand with a rolling pin, or use a pasta machine to achieve the desired thickness of noodles. Cut into desired width and shapes. Allow the pasta to air dry for at least 15 minutes to avoid having it clump together.
Footnotes
To cook fresh pasta
Bring a large pot of lightly salted water to a boil. Add the pasta, and cook for 2 to 3 minutes. Fresh pasta cooks very quickly. It will float to the surface when fully cooked. Drain, and use as desired.

Pesto Chicken Pasta

Ingredients
1/2 pound linguine pasta
1 (8 ounce) skinless, boneless chicken breast, cut into small pieces
salt and ground black pepper to taste
3 tablespoons olive oil
6 whole garlic cloves
4 ounces fresh mushrooms, halved
6 ounces roasted red peppers, drained and chopped
1 (7.5 ounce) jar marinated artichoke hearts, drained and quartered
3 ounces fresh spinach leaves
1/4 cup prepared basil pesto, or to taste
1 tablespoon freshly grated Parmesan cheese, divided (optional)
Directions
Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the linguine, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Drain well in a colander set in the sink.
While the pasta is boiling, sprinkle the chicken with salt and black pepper. Heat the olive oil in a large skillet over medium heat, and cook the chicken pieces until lightly browned, about 10 minutes, stirring frequently. Stir in the garlic cloves, mushrooms, roasted red peppers, and artichoke hearts; reduce heat to a simmer, and cook until the mushrooms begin to give off their juices, 5 to 8 minutes. Stir in the spinach, and simmer just until the leaves are wilted, about 2 minutes.
Transfer the cooked linguine into a bowl, and toss with the basil pesto. Divide the pasta between 2 plates, and serve topped with the chicken mixture. Sprinkle Parmesan cheese over each plate to serve.

Shrimp Avocado Pasta Salad

Ingredients
1 (16 ounce) package uncooked penne pasta
1/4 pound bacon
1 pound cooked shrimp, peeled and deveined
2 avocados – peeled, pitted and diced
1 cup shredded Cheddar cheese
1 cup mayonnaise
1/4 cup lemon juice
2 tomatoes, diced
1 teaspoon crushed red pepper
4 cups shredded lettuce
Directions
Bring a large pot of lightly salted water to a boil. Place pasta in the pot, cook for 8 to 10 minutes, until al dente, and drain. Rinse under cold running water to cool.
Place bacon in a skillet over medium high heat, and cook until evenly brown. Drain and crumble.
In a large bowl, gently toss together the pasta, bacon, shrimp, avocados, Cheddar cheese, mayonnaise, lemon juice, tomatoes, and red pepper. Serve over lettuce.

Angel Hair Pasta with Lemon and Chicken

Ingredients
1 (9 ounce) package BUITONI® Refrigerated Angel Hair Pasta
1 1/2 cups cubed cooked chicken
1/3 cup butter, melted
2 tablespoons lemon juice
2 tablespoons chopped fresh parsley
1/4 teaspoon marjoram
1/4 teaspoon garlic powder
Directions
Prepare pasta according to package directions.
Toss pasta with chicken, butter, lemon juice, parsley, marjoram and garlic powder. Season with salt and ground black pepper, if desired.
